Avocado and Wasabi Dressing

2 tsp dry mustard
1 tsp salt
½ tsp white pepper
½ tsp sugar
¼ cup lemon juice
½ tsp finely grated lemon rind
1 tsp wasabi
3 egg yolks
2 cups Grove Extra Virgin Avocado Oil

Mix mustard, salt, pepper, sugar, lemon juice, lemon rind, wasabi and egg yolks in a blender. With the motor running, add oil slowly in a thin stream until fully mixed and very thick.

Makes approx 3 cups. Dressing can be thinned with hot water or more oil. Keep refrigerated.
